Amish Sour Cherry Pie

Amish Sour Cherry Pie

1 1/4 cups cherry juice
1 1/2 cups water
1/8 teaspoon salt
2/3 cup sugar
5 Tablespoons quick-cooking tapioca
1/4 teaspoon ground cinnamon
3 cups canned sour cherries, drained
pastry for 2-crust 9-inch pie

In a medium saucepan, heat together cherry juice
and 1 cup of the water. In a bowl, mix together
salt, sugar and tapioca with 1/2 cup water.
Slowly stir this into the heated juice, stirring
constantly. Cook until thick. Add cinnamon and
cherries and stir. Chill. Preheat oven to 400
degrees F. Pour cherry mixture into pie crust and
top with a lattice crust. Bake for 10 to 15 minutes.
Reduce heat to 350 degrees F. and bake until
filling is bubbly and crust is light brown, about 30
minutes.

Goals for the household

I think I need to make a list of things that need done around the house so that it is right in front of my face so I dont forget. I’ve been spending way too much time online doing nothing so I need to get this house organized.

  1. Rearrange furniture
  2. take down christmas tree
  3. Go through VHS tapes and throw out some
  4. Organize all my free samples (they’re laying all over the house)
  5. Get laundry caught up
  6. Go threw clothes and get out items for the needy
  7. Create a menu for 12/30 to 1/15
  8. Create a grocery list
  9. go threw coupons

I use a couple of free tools I found online for my menu and for my grocery list.

  1. The first one is a pdf format for a weekly Menu. If your kids are anything like mine the first thing out of their mouth when they walk in from school is “whats for dinner”. After finding this I filled it out and stuck it up on the fridge so that everyone could see it. Now I don’t hear that famous “whats for dinner” question 10 times a day.
  2. The next free tool has been a great tool for me. The shopping list program is very easy to use. Once you download it you can see that it already has many categories listed, now you may change these or add more if you like depending on your needs. Another great thing about the shopping list program is that you can input the price of items and it will give you a total of what you will be spending. For me this is a really great tool, not only do I know exactly what I need it also gives me a total if I know the prices.

Easy Chicken Pot Pie

Easy Chicken Pot Pie

  • 2 10 oz frozen, mixed vegetables ($1.98)
  • 4 chicken breast cooked and diced chicken ($4.99)
  • 2 (10 3/4 oz) can cream of chicken soup ($1.10)
  • 2 cup bisquick mix (On hand)
  • 3/4 cup milk (On Hand)
  • 1 egg (On Hand)

Directions

Heat oven to 400.

Mix vegetables,chicken and soup together pour into ungreased pie pan.

Stir together remaining ingredients with fork until blended. Pour into pie pan over the chicken and vegetables mixture.

Bake about 30 - 45 minutes or until golden brown.

Couldn’t ask for an easier and better tasting pot pie.

(This recipe also called for stove top stuffing on top of the bisquick, I didn’t think I’d like it so I didn’t add it)

COST: $8.07 (Feeds family of 5) Large helpings

Yummy Meat Pie (Shepards Pie)

Yummy Meat Pie

I wasn’t too sure about this recipe, But it was very good I Think this is one we’ll have to do again. One recipe will feed at least 8, or our family of 5 had seconds. If you have a small family cut the recipe in half or make a double batch and freeze it.

  2 lb. ground beef ($2.78)

1 cup cheese (your favorite) shredded Cheddar ($2.99)

2 small onion (on hand)

2 can tomato soup ($0.86)

1 can water (free)

4 cans cut green beans drained ($1.56)

leftover mashed potatoes from last nights meal (enough to cover dish)

Preheat oven to 350.

Brown ground beef with onion, drain.  Spread evenly in a baking dish our casserole dish.  Drain cans of green beans and spread them evenly over beef.  Sprinkle cheese evenly over green beans.  Mix tomato soup with water, pour evenly over entire mixture.  Spread mashed potatoes evenly on top. I also added some cheese on top of the potatoes. Bake at 350 for 1/2 to 45 minutes.  Serves 8 large helpings.

Cost  $8.19

Sausage Potato Bake

 

INGREDIENTS (Double Batch)

  • 8 cups cubed potatoes ($1.49)
  • 2 pound smoked sausage, sliced ($3.98)
  • 2 (10.75 ounce) can condensed cream of mushroom soup ($1.10)
  • 2 (10.75 ounce) can french onion soup ($1.58) this called for vegetable soup But I used french onion instead

DIRECTIONS

  1. For oven: Preheat oven to 350 degrees F (175 degrees C).
  2. In a 4 quart casserole dish, combine the potatoes, kielbasa OR sausage, mushroom soup and french onion soup. Mix together well.
  3. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours.
  4. For slow cooker: Place the potatoes, kielbasa OR sausage, mushroom soup and vegetable soup in a slow cooker.
  5. Cook on low setting for 6 to 8 hours.

Cost: $8.15 (Once again I Made a double Batch so It actually only Cost me $4.07)

Beef and Noodle Bake

Beef and Noodle Bake

This was very good, My whole family enjoyed it. I doubled what was called for because my family are big eaters, but they didn’t end up eating the second pan so I can freeze it for another meal later this month.

INGREDIENTS

· 2 pound ground beef ( $2.78)

· 1 (32 oz) elbow macaroni ($1.38)

· 6 cups spaghetti sauce ($1.78)
· 12 oz shredded cheese ($4.48) I used one full bag plus the half of one I had left over from last nites dinner.

1 onion chopped (On hand)

1 green pepper chopped ($0.33)

dash garlic powder (On hand)

DIRECTIONS

 

 

In a 9×13 inch baking dish, layer the macaroni, ground beef, spaghetti sauce and cheese, repeating two times. (I used 2 9 x 13 baking dishes.)

Cost $10.75 (Made double batch. Actual Cost for 1 Dish $5.37)

This is very cheap because remember I made a double batch, So I actually got 2 Meals out of it.

Easy Chicken Quesadillas

Tonight for dinner we had an awesome meal. I found it online but I can’t remember where it was.

Easy Chicken Quesadillas

Ingredients

2 Lbs of boneless chicken ($6.99 large bag save a-lot)

1 can Green chilies w/ diced tomatoes ($0.49 save a-lot brand)

1 1/2 bag Shredded Sharp Cheddar cheese ($4.48 Save a-lot brand)

1 1/2 pack Flour Tortilla ($1.33 save a-lot brand)

cook chicken and then shred it, mix in can of green chili with diced tomatoes, cook down so the juice is absorbed. Place tortilla in skillet and grab a small amount of cheese and place on half of the tortilla. spoon in amount of chicken mix you desire, fold tortilla in half and brown on both sides.

We like to use a bit of sour cream and hot sauce with ours. It is delicious! enjoy

feeds family of 5

cost: $13.29

( This may seem high but remember I still have half the cheese and half the tortillas for another meal or lunch)

Beef Tips and Noodles

I thought maybe it will help some others if I post some of my meals and the amount I spent making it for a family of five. Tonites dinner will be Beef Tips and Noodles. I usually don’t buy beef tips because they are a bit costly around here but I found a great deal on them at a local store. I got a pack of four large beef tip steaks for $9.78. I can get two meals out of this. Okay so on with it lol:

Supples & Cost
Beef Tips - $4.89
Dry onion soup mix - $.49 (You get 2 packs in a box for $.99 save the other for another meal)
2 cans. Cream of mushroom - $1.58 (Off brand $.79)
Egg Noodles - $.99 (Off Brand)
Milk - On hand

Total: $7.95

I cut the beef tips into cubes and added the onion soup mix and cream of mushroom to the slow cooker and about 1 cup of milk and It will cook about 6 to 7 hours on High. I like this served over noodles but some people like it with rice.

I have some tomatoes and lettuce that my mom brought over so I will have a salad along with the Beef Tips and Noodles.
